I posted this recently on Facebook, so if you saw it there, I'm sorry for the repeat. So here it is. Basically, I eat the same "type" of meal on the same day every week. Yes, it's that easy. And yes, it really works. I've done this for the last few summers. Of course, you don't have to stick to the menu for every day, but when you are brain dead or feeling the laziness of summer, it's great to have something set in place.
Most of these suggestions are like "bowl" dinners. This means that I put the ingredients out on the counter, and everyone builds their own bowls. For Taco Tuesday, for example, I put out tortilla chips, rice, beans, some kind of seasoned meat, lettuce, tomatoes, cheese, salsa, guac. For Potato Bar, we put a baked potato in the bowl and then top it with cheese sauce, or broccoli, chili, chopped ham, etc. And the pasta bowl is everyone's favorite. This is pasta with sauteed vegetables, cheeses, red or white sauce, sausage, etc. or my daughter's bowl, which has pasta and just pasta. How fun and easy is that? When I shop, I just buy things that I know will make good toppings for all of these meals, trying something new and exciting every week. I also buy lots and lots of vegetables and cook these with every bowl meal. What doesn't doesn't taste good with sauteed zucchini? (Although, my kids would beg the difference.)
